COMO Shambhala Kitchen maintains a commitment to rigorous nutrition. Cooking techniques preserve the bioavailability of nutrients and essential components within them, allowing diners to benefit from the ‘life force’ of the specific ingredients — many of them raw, and brought from field to table with minimum delay.
Dishes are low in sugar, salt, and are free of artificial additives. Recipes support various wellness intentions, such as brain and cardiovascular health, blood sugar stability, and craving control. The food is wholesome and satisfying, but also light and easily digested, with a wide range of fresh salads and soups.
